my love of soup has totally grown.
i love to cook, i always have.
but soup is especially easy, as long as you take the time.
this soup has all sorts of veggies;
mire a poix = onions celery carrots sauteed in butter/oil.
its the base of the soup and brings the most flavor.
zucchini, yellow squash, green beans, tomatoes
and of course, some pasta for some depth.
sometimes vegetable soup is pretty bland,
but it's a good place to start for soup-beginners.
my plans for fall include soup once a week, preferably sunday.
butternut squash, carrot & ginger, pumpkin
beef soup, chicken tortilla [my favorite]
cream of chicken, & many others.
