this week is 'cream cheese icing week!'

over the weekend, i made about 3 times too much

and have lots of leftovers [about 10 pounds, id say]

yikes! but im excited !

this just gives me more of a reason to bake for others :)

and Chris [brother in law] since his birthday was last week.

i love this recipe because i can use it without the carrots

and use it as a spice cake, adding apples or pears!
